Double Choc Blueberry Muffins

For a flavour contrast this recipe for chocolate and blueberry muffins is really ideal.

Ingredients: 

WET MIX:

  • 1/2 cup butter or margarine
  • 1/2 cup sugar
  • 2 eggs
  • 1 cup milk
  • 1/2 cup blueberry yoghurt (light, if preferred)
  • 1 teaspoon vanilla
  • 1/2 cup choc chips
  • 1/2 cup Dick Smith Peanut butter
  • 2 tablespoons Ozechoc chocolate drink mixed with 4 tablespoons boiling water

DRY MIX:

  • 3 cups self-raising flour
Preparation: 
  1. Preheat oven to 180c
  2. Grease muffin tins (makes 12-16 large muffins)
  3. Thoroughly blend the margarine and sugar and beat in eggs, milk, yoghurt, vanilla, peanut butter and Ozechoc mix.
  4. Mix in choc chips.
  5. Fold in flour.
  6. Spoon into pans and bake for 15-20 mins (less if using smaller muffin size).
